Made with Grade A Yamada Nishiki rice from Tojo polished to just thirty percent, this sake exceeds typical Daiginjo standards yet keeps its Ginjo classification. Cold bottle aging allows the flavors to settle into a full bodied, expressive profile with notes of hazelnut, caramel, and fresh green herbs. The mouthfeel is structured and smooth, with deep umami and a long, nutty finish.
