Un arroz de Tokyo pulido según los estándares del Daiginjo, este sake representa la cima de la cervecería del puerto de Tokyo, completamente dedicada a Tokyo, su agua y sus levaduras. La levadura Yedo utilizada es más antigua que la levadura de asociación n.°1 y es una antigua levadura de sake japonesa aislada en 1898. En boca se percibe de inmediato un aroma de moscatel (4MMP) y una elegante nota de melón. La fragancia emerge con frescura, seguida de un umami transparente y una riqueza que se revela gradualmente. Un sake excepcional.
