De la destilería
Fundada durante el período Ansei (finales de la época Edo). En la era Taisho, se construyeron un Okura de ladrillo rojo capaz de almacenar bebidas alcohólicas y una chimenea hexagonal de 20 metros de altura, poco común en el país. En 2007, el valioso valor constructivo, histórico y cultural fue reconocido y registrado como bien cultural tangible registrado del país. Actualmente, la destilería se dedica a la elaboración artesanal de sake, guiada por jóvenes elaboradores.

A new team took over the former Takahashi Sake Brewery and relaunched it as Aoi Brewery, Inc.
2025
Began growing rice locally in Nagaoka for the brewery's own sake production for the first time since the succession.
