The founder's founder was called "Niemon", which came and went from the end of the Warring States period to the beginning of the Edo period from the country of Kaga (now Ishikawa Prefecture), and is still called "Kaga Jin" in Yuzawa. 。
Initially, it was an oil shop, but later also brewed miso brewing.
The "Ito Ninemon Shoten", which is the source of Ryoseki Sake Brewery, was founded in 1874 (1874).
The brand of "Ryoseki" is from Yatsushiro Niemon, and from the relationship with the sake of sake (Masamune = genuine), "Masamune Masamune in the eastern sword, the west of the west, and the east -west Ozeki." It is said that the doctor was named.
During the Meiji era of the seventh generation Jinemon (around the 1880s), the demand for sake increased due to the prosperity of the in -hospital silver mountain.
Since the mainstream was Otokura from Nada Fushimi (Kobe / Kyoto), we decided to make sake brewing to make sake that could not be lost.
Therefore, he studied sake brewing to Tadayoshi, his brother, Niemon Yatsushiro, to improve sake quality. Since then, he has been developing technicians themselves without entering Mori from the storehouse.
At the end of the Meiji era, when the inflow of Nada sake became remarkable along with all of the Ou Main Line, the ninth generation Jinemon and Tadayoshi Nishiro were bloody, and the unique "Low -temperature brewing method" and "" Low -temperature brewing method "and" Ito -style skylight was developed. As a result, we won numerous awards, including the first prize for the first national liquor gathering.
The technology and know -how at this time were actively opened, and the two -rifiers became the Akita style, the Tohoku style, and influenced the brewing methods in the brewing and cold regions in the Tohoku region.
Since then, the quality of sake has been inherited from the first meaning and good old traditions, and it has been integrated with the community while trying new attempts.
