Setsugorou Genrokushu ist eine junmai-Rekonstruktion eines Rezepts aus der Edo-Zeit der Kikusui Sake in Niigata, die Reis verwendet, der auf nur 90 % poliert ist, um den dichten, unpolierten Geschmack des sake aus der Genroku-Ära (1688-1704) nachzubilden. Mit einem SMV von -20, konzentriertem koji und minimalem Wasser in der Maische liefert er eine kraftvolle, süß-saure Fülle, die an den alten japanischen sake erinnert.
