Kimoto-Fermentation und mindestens fünf Jahre Eistemperaturreifung prägen diesen junmai daiginjo einer Saitama-kura, die 1987 Japans erste Nachkriegs-All-junmai-Brauerei wurde. Das harte Wasser des Chichibu-Aquifers und die lange Reifung ergeben einen Sake von bemerkenswerter Tiefe, der am besten warm bei 45 bis 55 Grad Celsius genossen wird.
