Yamada Nishiki und Akebono, auf 60 % poliert, bilden die Basis dieses Chikurin Fukamari Junmaishu von Marumotoshuzo in Asakuchi, Okayama. Mit selbst angebautem Yamada Nishiki gebraut, der seit 1987 auf den eigenen Feldern der Brauerei gewachsen ist, zeigt dieser junmai das charakteristische tiefe, wärmende umami, das sich beim Servieren erhitzt wunderschön entfaltet und Spitzenplätze bei Wettbewerben für erhitzten Sake einbringt.
