Founded in Hakushu's famous water, the first Ihei Nakaya was founded in 1750 (Edo Kanei 3). Since then, the famous water in Hakushu has been reborn as a fresh sake "Seven Ken" depending on the rice, water, and human hands.

We repeated prototypes in search of the structure that goes well with the water in Hakushu, and established a ginjo -brewed raw sake -made method. The moisture, freshness, refreshing, and lightness in the mouth is the true value of seven wise using water in Hakushu.
