Yumenotobira is produced by Houmei Shuzo, a brewery founded in 1797 in Tamba Sasayama, Hyogo Prefecture — a region known for Yamada Nishiki rice cultivation and deep sake-making traditions. The brand's most distinctive characteristic is its fermentation process: classical music by Mozart and Beethoven, as well as the local Tamba Sasayama folk song Dekansho Bushi, are converted into vibrations and applied directly to the moromi in the fermentation tanks. The brewery states this process produces finer molecular structure in the sake, resulting in a mellow, rounded character.
