Inagawa Shuzoten was founded in 1848 at the foot of Mount Bandai in Inawashiro, Fukushima Prefecture, and produces sake under both the Inagawa and Shichijuro labels. Shichijuro is brewed slowly at low temperatures to draw out the qualities of Miyamanishiki rice, then bottled without filtration or dilution, resulting in a slightly dry sake with clean definition. The style reflects the elegant, fruity character typical of Fukushima sake, tempered here by a more refreshing and firmly structured profile.
