Nichinichi Jozo was founded in 2022 in Fushimi, Kyoto by brewer Hidehiko Matsumoto, who named the brewery and brand after the Zen phrase hibi kore kojitsu (every day is a good day), expressing the aspiration to brew meaningful sake without exception. Using contract-grown Yamadanishiki from the Banshu region of Hyogo and traditional kimoto fermentation with Fushimi underground water, the small team produces limited-quantity, low-alcohol sake that has quickly gathered a devoted following for its subtle complexity and clean depth.
