Kikuhide is produced by Kitsukura Shuzo, a brewery founded in 1696 in the Saku region of Nagano Prefecture at an elevation of 700 meters, where the Chikuma River delivers pristine mountain water and winter temperatures regularly drop below minus 10 degrees Celsius. The brewery upholds the philosophy that sake is a gift from nature, prioritizing traditional hand-crafted methods and local ingredient sourcing over scale. Kitsukura Shuzo also produces new categories including buckwheat shochu, liqueurs, and sparkling junmai alongside its core sake range.
