Nakamura Shuzo, established in Kanazawa, Ishikawa Prefecture in the early nineteenth century during the cultural flourishing of the Maeda clan's castle town, produces Kagasetsubai alongside its sister brand Nichiei, using Noto-region Yamada Nishiki and Gohyakumangoku sake rice. The name Kagasetsubai ('Kaga plum blossom in snow') evokes the brewery's philosophy: sake as pure and graceful as a plum flowering through winter snow, described as light, clean, and subtly dry. The brewery is located near the base of Mount Hakusan, whose snowmelt contributes to the soft brewing water characteristic of Kanazawa sake.
