OZAWA Sake Brewery, founded in 1702 in Okutama in the mountains of Tokyo, is the oldest sake brewery in the Tokyo metropolitan area with over 300 years of continuous production. Best known for its flagship Sawanoi brand, the brewery also produces the Juku label and in 2002 revived the rare practice of brewing in wooden barrels for the first time in 50 years, creating sake with gentle complexity. Water drawn from a 140-meter horizontal well cut into paleozoic Chichibu-system bedrock provides the clean, mineral foundation for all of the brewery's expressions.
