Wakaze was founded in 2016 by Japanese entrepreneurs Takuma Inagawa and Shoya Imai and established its Kura Grand Paris brewery on the outskirts of Paris in 2019, making it one of the few sake producers operating entirely in France. Most ingredients, including water and rice from the Camargue nature reserve, are locally sourced while the brewing follows traditional Japanese methods. The Heroes collection, comprising the Classic, Botanic, and Barrel expressions, forms the flagship lineup, with the Barrel series aged in Burgundy Pinot Noir, whisky, and Cognac casks.
