Harugokoro
Nishide Shuzo, founded in 1913 in Komatsu City, Ishikawa Prefecture, produces Harugokoro using organic local rice, brewery-resident natural yeast, and the traditional kimoto method that cultivates lactic acid bacteria without any additives. After a closure from 1996 to 2014, the brewery was revived under new management and has since committed fully to natural fermentation, allowing native microorganisms to define the sake's character each season. The result is a distinctly individual sake with layered acidity and umami shaped by the brewery's own living environment.
