Hattan Nishiki, o arroz para sake representativo de Hiroshima, conhecido pelo sabor equilibrado, baixa incidência de notas indesejadas e aroma herbáceo limpo, é a base deste tokusen ginjo da Uesugishuzo. A cervejaria conquistou Ouro no National New Sake Awards em 2000, 2001 e 2002. Elaborado na tradição de água mole de Hiroshima, que favorece uma fermentação suave e arredondada.
