A Shirasugi Sake Brewery utiliza apenas esse arroz especial e é a única cervejaria no Japão a produzir sake de forma tão singular. O sake fermenta somente com arroz e água, sem se render ao senso comum, sempre desafiando novos sabores. Utilizando koji negro e leveduras produtoras de ácido láctico, a cervejaria busca um sake aconchegante como um prato de arroz, elaborado com o arroz de Tango, nesta terra chamada Tango.
