O Hiroshima Hattan Ginjo da Hakubotan Shuzo é elaborado em Saijo, Higashi Hiroshima, a cervejaria mais antiga desse renomado distrito, fundada em 1675. O uso do arroz Hattannishiki, o arroz de sake característico de Hiroshima, valorizado por suas qualidades propícias ao ginjo e seu potencial aromático, reflete uma tradição de expressão do terroir local no ambiente de elaboração com água mole de Saijo. A Hakubotan está associada à revolução do sake elaborado com água mole do final do século XIX no Japão, que ajudou a inaugurar o estilo ginjo elegante e aromático reconhecido mundialmente.
