Our warehouse is located in the middle of a rice field in Hakusan City, Ishikawa Prefecture. On a sunny day, it is a peaceful place in the sky, facing the ridgeline of Hakusan.
In 2020, it was 150 years old, and it was replaced by Yasuyuki Yoshida, a young 7th generation.
The brands are "Torikawa" and "Yoshida".
The "Torikawa" inherits the traditional taste of tradition, and "Yoshida" practices sake brewing to connect to the future that has returned to the original form of local sake.

The most important thing in the structure is the heart of "Waryo Sake".
The sum of people brews good sake, and good sake creates people's sum.

Mountain abolition is a technique that Mr. Noto is good at. It is a natural way to bring in lactic acid bacteria in the warehouse and generously spend time and effort. "Modern Mt. Mountain", which has evolved by trial and error to the wisdom of the predecessor, is a gentle liquor with an exquisite balance between soft sourness and delicate flavor.
