Description

Yamada Nishiki polished to 40% is collected using the funagake gravity-drip (shizuku) method, in which the moromi bag is hung to drip freely without any pressing pressure. This extreme-care extraction yields a refined daiginjo from Shiogama, Miyagi, and the same product won first prize at the 2022 National Sake Competition in the ginjo and daiginjo category.
