Tsurunotomo Jojonomorohaku is a premium expression from the intensely local Tsurunotomo brand at Hikiki Shuzo in Niigata City, whose distribution is largely confined to the brewery's immediate neighborhood. The term morohaku historically refers to sake in which both the koji rice and the main fermentation rice are highly polished white rice, indicating a refined, clean brewing approach. Crafted with the soft water and careful technique synonymous with Niigata sake, it presents a delicate, layered flavor with a smooth, graceful finish.
