Yamada Nishiki polished to 45% underpins this junmai daiginjo namagenshu from a Miyagi brewery rebuilt after the 2011 tsunami. Conceived while imagining the sound of waves from a lakeside hermitage, it offers a fresh, vibrant aroma with juicy umami and excellent finish.
