Description
Brewed in the kijoshu style using Taichu 65 rice from Shimane Prefecture milled to 50 percent, this junmai daiginjo replaces part of its brewing water with sake itself. Each vintage folds in a portion of the previous year's brew, producing a floral nose and a silky, opulent palate with notes of caramel, grape and bubble gum that finish clean for the style.
