Daiginjo brewed with Yamada Nishiki and pressed by the fukuro-tsuri (bag-drip) method, collecting only the drops that fall under gravity with no applied pressure. This labor-intensive process yields a sake of exceptional clarity, elegant ginjo aroma, and soft, clean umami, and earned the Top Prize in the ginjo category at the 2021 Tohoku Seishu Kanpyokai.
