Yamada Nishiki polished to 40% is slowly pressed by the shizuku (drip) method, allowing only free-run sake to accumulate without mechanical pressure, in this undiluted (genshu) daiginjo from Yamazaki Limited Partnership in Aichi. The 'Gengenmaru' (Gengen) label marks the brewery's most refined expression, using Mikane foothills soft water for a clean, elegant base. The drip-pressing technique maximizes aromatic purity at the cost of yield.
