Rairaku Junmai Daiginjo 50 Yamadanishiki from Ibaraki Shuzo in Itami, Hyogo, uses Yamada Nishiki rice milled to 50 percent, the threshold at which pure-rice sake earns the junmai daiginjo designation. Yamada Nishiki, developed in Hyogo and widely regarded as the ideal sake rice for premium brewing, provides large, starch-rich grains that ferment cleanly at high polishing levels to produce complex, fragrant sake. Itami's historic brewing tradition and Hyogo's access to premium locally grown Yamada Nishiki support the production of a refined, balanced junmai daiginjo with an elegant floral profile.
