
Takachiyo Shuzo, founded in 1871 in Minami-Uonuma, Niigata, at the foot of Mt. Makihata, draws snowmelt spring water from the mountain and mills all rice in-house using flat-polishing that follows the grain's natural shape rather than stripping it uniformly. The name Plus 19 is the entire pitch: this junmai is brewed to an SMV of positive 19, among the driest profiles in the brewery's range, designed for those who want pure, clean dryness without sweetness to soften the edge. Miyama Nishiki polished to 65% provides the rice character; Niigata G9 yeast drives the fermentation. Dry, sharp, and clean from the first pour to the last.
