
Co-founder Ben Bell trained for two full brewing seasons at Nanbu Bijin in Japan before establishing Origami Sake in Hot Springs, Arkansas, and consulting master brewer Satoshi Tamakawa from Nanbu Bijin joins on-site for six months each year. The brewery's well taps the Ouachita Mountain aquifer for naturally mineral-balanced water; rice is locally grown Arkansas Yamadanishiki fermented with 701 yeast. White Lotus is a junmai nigori: left unfiltered with rice sediment in suspension, it delivers a creamy texture with sweet notes of coconut, apple, and pineapple, brightened by fresh citrus acidity.
