Yume Ikkon, a Fukuoka-developed brewing rice, is polished to 65% for this junmai at a brewery in Kurume, Fukuoka that was among the first in Kyushu to commit entirely to pure rice sake. Locally contracted Yume Ikkon and soft Chikugo River water produce a light, clean junmai suited to food.
