Daiginjo from Shimada Shuzo in Touon City, Ehime, a small family brewery where the owner serves as toji. Named in reference to Mt. Kofuji of Iyo and the Seto Inland Sea, it pursues a balance of presence and subtlety, with ginjo-forward aromatics suited to seafood cuisine.
