Wakabayashi Sake Brewery is a small liquor store located in Onsenzu -cho, Ota City, Shimane Prefecture. Onsenzu Town has long been known as a hot spring town, and is famous for its high -quality hot springs. It also flourished as a port that transports silver of Iwami Ginzan from the Middle Ages to modern times. Wakabayashi Sake Brewery was founded in such a town in 1907. The prepared water used for sake uses Iwashimizu, which is not well water because the warehouse is close to the sea, but from a mountain 4 km away from the warehouse. Rice, which is the raw material for sake, uses a lot of rice suitable rice that is produced only in the prefecture, including Yamada Nishiki, which is mainly purchased from contract farmers in the prefecture. In recent years, Wakabayashi Sake Brewery has recently become a “pure rice store” called Junmai Sake in recent years in Wakabayashi Sake Brewery. Ryoma Yamaguchi, who has been abolished and no longer used, is known as the first to revive in Shimane Prefecture. In Wakabayashi Sake Brewery, many of the sake that produces this "raw" sake and produces many sake produced.
