This junmai uses Awa Yamada Nishiki, a variety cultivated in Tokushima Prefecture, polished to 60% at Suwa Shuzo in Tottori's Chizu-cho. The brewery's signature ultra-soft water supports a gentle, rice-forward umami with the clean bitterness-free finish that Suwa Shuzo's pure rice approach consistently delivers.

It is a warehouse located in Chizujuku, a post town where Honjin was used by the lord of the Tottori feudal clan on a change of work.
The founding is in Ansei 6 years, and the inscription of Suwa Izumi is derived from Suwa Shrine in the back of the store.
The theme of Suwa Izumi is "Happy Dining Table". We propose a happy dining table with alcohol.
