The summer aging under stable cellar conditions allows the sake to mellow and develop greater complexity, and the muroka designation indicates it is released without charcoal filtration. Hiyaoroshi is traditionally released in autumn when the temperature of the sake matches the cooling outdoor air, making it a classic seasonal drinking occasion.
