Saitama-grown Yamada Nishiki polished to 50% is fermented with the brewery's house yeast in this junmai daiginjo from Asahara Shuzo. Subtle effervescence from fermentation mingles with a smooth, lustrous rice umami and a well-balanced acidity. The Black label marks this as the Yamada Nishiki-based expression in the Musashino series.
