This Ittekisenryo Honjozo is produced as a namachozo, meaning it is stored unpasteurized and then pasteurized only once before bottling, preserving a fresher, livelier profile than conventional honjozo. A small addition of distilled alcohol in the honjozo process brightens the aroma and lightens the body, resulting in a clean, crisp sake well-suited to everyday meals. AKITAKENHAKKO KOGYO's Yuzawa location provides the soft snowmelt water that underpins the smooth finish.
