Ena Jozo's Ichinokawa Ginjo draws on the brewery's 200-year heritage in Nakatsugawa, Gifu, where pristine soft spring water descends from Futsumori Mountain into the brewery by gravity alone. Brewed with Hidahomare, the locally cultivated Gifu sake rice that the brewery actively supports with area farmers, it achieves a refined ginjo aroma of fresh herbs and pear with a clean, mountain-fresh finish.
