Miyama Nishiki milled to 65% in a dry (karakuchi) honjozo from the cold highland brewing region of Iiyama, Nagano. The firm-grained Miyama Nishiki variety, developed from radiation mutation of Takanishiki in 1978, lends the crisp, clean edge that defines this style.
