Hakuro Koshu (White Wolf Aged Sake) from Fujii Shuzo in the Misasa Onsen town of Tottori is aged for multiple years to develop the amber color, dried fruit notes, and mellowed complexity that define premium Japanese koshu. This brewery, documented as early as 1669 and the sole remaining producer in Misasa, uses well water drawn from its own property in this famous radium hot spring district to brew sake that rewards patience with depth and distinction.
