Ginjo Kogenshu is an aged ginjo sake from Aioi Unibio in Aichi, blended from reserves stored at low temperatures over multiple years. The extended maturation develops a rich, layered fragrance and a full-bodied, lingering finish. This brewery, with roots in traditional mirin and sake production, uses long-term cold aging to distinguish this koshu from fresh-pressed styles.
