Gekkeikan Koorigenshu is a cold-concentrated junmai from Gekkeikan in Fushimi, Kyoto, produced by chilling the mash to remove water as ice and concentrate flavor. Founded in 1637, Gekkeikan has driven technical innovation in sake for centuries, and this koori (ice) technique produces an intensely rich, full-bodied expression.
