Using the everyday food rice Koshihikari rather than dedicated sake rice requires considerable skill to prevent breakage during high polishing, and the brewery earned recognition including a Monde Selection gold award for this approach. The name Enman Daichi reflects the circular balance the brewery seeks in its sake.
