Daiginjo made from Yamada Nishiki polished to 40% at Ishii Shuzo in Satte, Saitama, a brewery founded in 1840. The style is characterized by a subdued but elegant aroma, a soft mouthfeel, and a gentle sweetness with a clean, dry finish. Saitama's river-plain water and the brewery's Hatsumidori label have made this one of the prefecture's recognized premium expressions.
