Daiginjo Gonenchozoshu is a five-year aged daiginjo from Reijin Shuzo in Nagano, using Yamada Nishiki polished to 39%. Long maturation at cold temperatures in the Nagano Alps mellows the sake's structure, developing a complex interplay of aged richness and refined ginjo character.
