Description
Made with the notoriously scarce Aiyama rice, this sake is unfiltered, unpasteurized and undiluted. The nose shows creamy melon soda notes with a signature sharp acidic prickle, while the palate turns lighter and crisper with fresh, grassy character. Subtle umami and a touch more sweetness set it apart from the producer's kimoto and yamahai styles.
