Tama Sakae rice, the male parent of Yamada Nishiki, was revived from near extinction by Fujii Honke in Shiga working with contract farmers, and this kimoto (traditional lactic-free starter) pure rice genshu is brewed using only the brewery's naturally occurring wild yeast. Polished to 50% and released as a living raw genshu, it presents a creamy, full-bodied texture with bright acidity and a well-defined umami, limited to 478 bottles per release.
Highly aromatic and elegant, with added alcohol to enhance floral notes.
