
In order to revive the essence of sake in the Edo period in modern times, it is a so -called pure rice sake brewed in so -called low -spirit white, which is about 90 % of the rice polished rice walking with koji and rice. Usually, this rarely polished rice brewing is extremely difficult to generate unpleasant taste. In this work, we try to express the elegance of modern Ginjo at the same time by elaborating the style of the Ginjo brewing technology of our store. In addition, from the 2019 harvest rice, it has been fully prepared for a wooden tub, and it embodies a more traditional figure. The evolution of the manufacturing method is remarkable, and the future growth is infinite. It is a work that fans want to follow.
