
Texas Sake Company, founded in Austin, is the first and only dedicated sake brewery in Texas, producing sake in the traditional Japanese style with locally sourced ingredients and filtered Austin tap water. Its Session Classic Sparkling Sake is built around California-grown Calrose rice polished to 70% and fermented with classic sake yeast No. 9, then naturally carbonated to create a lighter, effervescent alternative to both beer and still sake. The brewery cultivates its own koji in-house, a process that requires precise humidity and temperature control that few American producers undertake at this scale. Packaged in cans as well as bottles, the Session Classic reflects the brewery's goal of making sake approachable for the Austin market without sacrificing the integrity of the brewing process.
