
Daiginjo polished to 40% at a brewery founded in 1844 at the foot of Mt. Sarakura in Kitakyushu, using spring water from the Sarakura mountain system. The sake shows a lively fruit-forward aroma that has drawn comparisons to white wine, with a crisp, off-dry finish.
