Inadashigezo is the flagship brand of Okina Shuzo in Koga, Fukuoka, named by combining kanji from the brewmaster's name, the rice paddies essential to sake, and ripening stalks of rice. The brewery farms its own Yamada Nishiki in Munakata, pressing slowly by hand to coax out refined, full-bodied umami at a limited annual output.
